Cake:
1 1/2 c. boiling water
1 c. quick oats
1/2 c. shortening
1 c. brown sugar
1 c. white sugar
2 eggs
1 1/3 c. flour
1 tsp. cinnamon
1 tsp. soda
1/2 tsp. salt
Topping:
6 T. butter
1/4 c. milk
1/2 c. brown sugar
1/2 tsp. vanilla
1 c. coconut
1 c. nuts
Description
Grease and flour a 13 X 9 inch baking pan. Preheat oven to 350 degrees.
Pour boiling water over quick oats and let stand 20 minutes.
Cream together shortening, brown sugar, white sugar and eggs. Add oatmeal mixture and mix well. Add flour, cinnamon, soda and salt; mix well.
Pour batter into prepared pan and bake for 30 to 45 minutes or til toothpick is dry but not completely clean.
Meanwhile, mix all topping ingredients in a pan and boil for 1 minutes. Spread over warm cake. Place under broiler until brown.
