List of Ingredients Seasoning Rub:
1 cup fresh sage leaves
12 garlic cloves
1/4 cup fennel seeds, toasted, ground
2 T freshly ground black pepper
1/4 cup extra-virgin olive oil

Ham:
6 to 8 lb. bone-in (shank-end) fully cooked smoked ham

Glaze:
1 cup apple cider vinegar
1/2 cup apricot jam
1/2 cup packed dark brown sugar
1/4 cup molasses
2 T Colman's dry mustard
2 T anise seed
Description Heat oven to 325 degrees. Place a rack in the bottom of a shallow roasting pan.

Seasoning Rub: In a food processor, combine all ingredients. Process until mixture forms a paste.

Ham: Trim skin from ham, leaving a 1/4-inch thick layer of fat. Score a diamond pattern into the fat. Place ham, cut side down, on rack. Pat mixture onto ham.

Pour 1 cup water into roasting pan. Tent ham with heavy-duty foil. Bake 1 hour.

Glaze: Combine all ingredients in a saucepan over medium heat. Bring to a boil, stirring to dissolve sugar. Reduce heat and simmer 20 minutes, until reduced to 1 1/2 cups.

After 1 hour, uncover ham. Add 3/4 cup water to roasting pan. Brush 1/3 glaze over ham. Bake 30 minutes. Repeat, brushing two more times, and bake ham until internal temperature reaches 130 degrees, about 1 hour longer. Let rest 20 minutes.

Pour pan drippings through a sieve set over a bowl. Spoon off and discard fat; serve ham with pan juices.
