4 salmon filets, skin on
1/4 cup pure maple syrup
1/2 cup reduced sodium soy sauce
2 - 3 tsp. freshly ground black pepper
Description
Combine maple syrup and soy sauce in a covered bowl or zip-top bag. Add the salmon and refrigerate overnight.
Preheat oven to 400 degrees. Remove the salmon from the marinade and place in a baking dish. Drizzle with about 2 T. of the marinade, discard the rest. Using a peppermill, grind pepper over the salmon to cover the filets. Cover with foil, reduce heat on oven to 350 degrees, and bake for 15 to 20 minutes. Uncover for the last 5 minutes of baking if you choose. The skin will easily remove as you pull the salmon from the baking dish.
