Name Chicken with Smashed Potatoes

List of Ingredients 1 1/2 lbs. red potatoes, cut in half
1 T. olive oil
4 boneless, skinless chicken breasts
1/2 tsp. salt
1/4 tsp. pepper
1 c. matchstix carrots
1 c. chicken broth
1/2 c. heavy cream
1/2 tsp. dried tarragon, crumbled
1/2 c. frozen peas
1 T. margarine
Description Cover potatoes with water and heat to boiling. Reduce heat, cover and simmer 12 minutes or til tender.

Meanwhile, heat oil in skillet til hot. Add chicken and sprinkle with salt and pepper, cook 6 minutes. Turn chicken and cook 8 minutes more or til juices run clear. Remove from skillet and keep warm.

To same skillet add carrots, broth, cream and tarragon; cover and cook 5 minutes or til carrots are tender. Stir in peas. (May need to add additional cream and broth.)

Coarsely mash potatoes with margarine, salt and pepper.
