List of Ingredients 2 slices thick-cut bacon, cut into 1/2-inch pieces

1 medium sweet potato, peeled and cut into 1/2-inch chunks

1 lb. dried split peas

salt and pepper

lemon juice

1 tsp. fresh thyme leaves

1/4 cup grated Parmesan cheese
Description Preheat oven to 400 degrees.  Place sweet potato and bacon on a rimmed baking sheet.  Roast until potato is golden and bacon is crisp, about 25 to 30 minutes.



In a large saucepan, combine split peas and 6 cups water.  Simmer, uncovered, until peas are very soft, 50 to 60 minutes.  Transfer half the peas to a food processor and puree until smooth.  Return puree to pot and stir.



Season soup to taste with salt and pepper and lemon juice.  If needed, add more water to thin soup.  Top each bowl with potato, bacon, thyme leaves and Parmesan.
