List of Ingredients 16 oz. dried white beans

1 T canola oil

1 medium onion, chopped

10 cloves garlic

4 cups reduced-sodium chicken broth

2 cups water

3 large sprigs fresh thyme

1 fresh bay leaf

1/4 tsp. freshly ground pepper
Description Place beans in water to cover and soak overnight.



About 3 hours before lamb is done, heat canola oil in Dutch oven over medium heat.  Cook onion until translucent about 3 to 5 minutes. Add garlic and cook until fragrant, about 45 seconds.  Add broth, water, thyme and bay leaf.  Bring to a boil. reduce heat and simmer for 20 minutes.  Add drained beans; return to boil.   Reduce heat to maintain a gentle simmer.  Season with pepper.  Cover and simmer until very tender, 1-1/4 to 1-1/2 hours, depending on type of bean.



Season with more pepper, if desired and serve warm with lamb.
