List of Ingredients 1 lb. dried small red beans
1 teaspoon garlic powder
1/2 cup diced onion
2 teaspoons salt
1 bay leaf
1 teaspoon white sugar
1/4 teaspoon ground cayenne pepper
1 teaspoon celery seed
1 teaspoon ground cumin
1/4 teaspoon crushed red pepper flakes
1 ham hock
1 pound smoked sausage, sliced
2 cups rice
chicken bouillon
Chopped fresh parsley
Fresh lime juice
Description Pick over beans and soak overnight. When ready to cook, place beans in large pot and cover with an inch of water. Add all of the ingredients through the ham hock. Bring to a boil, boil one minute, and reduce heat to medium-low or low. Allow to simmer for 1 1/2-3 hours, until beans are cooked to your liking.

When the beans were done, there was still a lot of liquid, and this is supposed to be a fairly thick dish. So I removed the ham hock and added the rice directly to the beans and cooked at a simmer for 20 minutes, until the rice was done. After about 15 minutes of cooking, the liquid was almost gone, so I added 1/2 cup of water, and a bouillon cube. When cooked through, I added a little more celery seed and some fresh parsley as well.

At this point, you can serve this as a meatless side dish. You can also shred the meat on the ham hock and add it to the pot with the smoked sausage.

I served this with lime wedges, which cut the heat and also added some freshness.
