1 plain white cake mix (18.25 oz.)
1 cup whole milk
8 T. (1 stick) butter, melted
3 large eggs
1 tsp. vanilla extract
2 tsp. ground cinnamon
Cinnamon Buttercream Frosting (need 2 recipes for 70 mini-cupcakaes and 1 recipe for 24 large cupcakes)
Description
Place a rack in the center of the oven and preheat the oven to 350 degrees F. Line 70 mini-cupcake pans or 24 large cupcake pans with paper liners.
Place the cake mix, milk, melted butter, eggs, vanilla and cinnamon in a large mixing bowl. Blend with an electric mixer on low speed for one minute. Stop the machine and scrape down sides of the bowl with a rubber scraper. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look well combined. Spoon batter into prepared cups, filling about 3/4 full.
Bake until golden brown and centers spring back when lightly touched, about 15 minutes. Remove pans from oven and place on wire racks to cool about 10 minutes. Remove from pans to racks and cool completely before frosting.

Notes
Can also be made as a layer cake. Grease two 9-inch round pans and dust with flour, bake for 27 to 29 minutes.
Cake may be stored, coverd for up to one week in refrigerator.
