6 medium firm tomatoes, thinly sliced
1 prebaked 12-inch pizza crust
2 T olive oil
salt and pepper, to taste
2 oz. sliced ripe olives, drained (optional)
1/2 cup diced green pepper
1/2 cup diced onion
1/4 cup minced fresh basil
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
Description
Place tomato slices in a circle on crust, overlapping slightly until crust is completely covered. Drizzle with olive oil and season with salt and pepper. Sprinkle with half of basil. Cover with olives, if desired, green pepper and onion. Sprinkle with remaining half of basil.
Cover with cheddar and mozzarella cheese. Bake at 450 degrees for 10 minutes. Serve immediately.

Notes
I took most of the seeds from the tomatoes so the crust wouldn't get soggy.
I used kalamata olives and it was delicious.
I probably used more basil than 1/4 cup; use your judgment.
