Name Fettuccine with Smoked Salmon

1 cup clam-tomato juice

1/2 cup dry white wine or reduced sodium chicken broth

2 red onions, finely chopped

2 tomatoes, peeled, seeded and chopped

1/4 cup light cream cheese

2 tsp pink or mixed peppercorns, bruised

1/4 tsp. salt

1/2 lb. smoked salmon, flaked

2 T chopped, fresh dill (optional)
Description Cook the fettuccine according to package directions; drain and place in serving bowl.



In medium saucepan, combine the clam-tomato juice and wine; bring to a boil.  Add the onions; reduce the heat and simmer until soft, about 3 minutes.  Stir in the tomatoes, cream cheese, peppercorns and salt; cook stirring constantly, until well blended, about 2 minutes.



Sprinkle the salmon over the fettuccine; add the sauce and toss to coat.  Serve, sprinkled with dill.
