List of Ingredients 1 lb. uncooked very lean ground turkey

2 T. purchased basil pesto + more for spreading

1/4 cup finely shredded Parmesan cheese

3 cloves garlic, minced

1/4 tsp. kosher salt

2  3-inch ciabatta breads or four 3/4-inch thick slices rustic bread

2 T. olive oil

4 slices mozzarella cheese

2 cups fresh arugula leaves or spring mix

8 slices tomato

ground black pepper
Description Combine ground turkey, pesto, parmesan, garlic and salt.  Shape into four 1/2-inch thick patties (to fit bread).



Halve ciabatta horizontally.  Brush cut side of ciabatta or both sides of rustic bread with olive and fresh ground black pepper.



For gas grill, preheat grill and reduce heat to medium.  Place patties on oiled grill rack over heat.  Grill, uncovered, 10 to 13 minutes or until no longer pink (165 degrees), turning once halfway through grilling.  Top each with a mozzarella slice.  Cover grill; grill 1 to 2 minutes more or until cheese is melted.  Add bread and grill for 1 to 2 minutes per side or until toasted.



Spread a little additional pesto on toasted bread and top with greens.  Top with patties and tomato slices.  Sprinkle with a little coarsely ground black pepper, if desired.
