1/2 tsp. salt

1/4 tsp. pepper

6 (1/4 lb.) boneless, skinless chicken thighs

2 T. vegetable oil

1 large onion, chopped

1 green pepper, seeded and chopped

2 celery stalks, sliced

3 garlic cloves, finely chopped

1 T. tomato paste

1 tsp. dried oregano, crumbled

1/2 tsp. fennel seeds, crushed

3 bay leaves

2 tomatoes, chopped

1 cup low-sodium chicken broth

2 T. minced fresh parsley
Description Combine the flour, slat, and pepper in a large shallow dish or pie pan.  Dredge the chicken in the flour, coating completely; shake off the excess.  Heat 1 T. oil in a nonsticke skillet, then add the chicken and cook until browned, about 1 minute on each side.  Transfer the chicken to a plate and set aside.



Heat the remaining 1 T. oil in the skillet.  Add onion, bell pepper, celery and garlic and saute until softened, about 5 minutes..  Stir in the tomato paste, oregano, fennel seeds,a dn bay leqaves.  Add the tomatoes and broth and bring to a boil.



Add the chicken to the pan and spoon the vegetable mixture over the pieces.  Reduce the heat, cover and simmer until the chicken is cooked through and tender, about 25 minutes.  Discard the bay leaves.  Sprinkle with parsley.
