Name Oven-Dried Tomatoes (Sun-Dried)

List of Ingredients Cherry or small plum tomatoes

2 tsp. salt

1 tsp. dried basil

1 tsp. dired oregano

1 tsp. dried thyme
Description

Cut in half or quarter tomatoes (depending on size).  Remove any visible green stem parts.  Scrape as many seeds as possible without removing the pulp.



Arrange tomatoes, cut side up, in glass or porcelain baking sheets.



Mix together salt, basil, oregano and thyme.  Crush if necessary and sprinkle lightly on tomatoes.



Bake at 200 degrees for 3 or 4 hours.  



Turn the tomatoes over and press flat with hand or spatula.  Continue to dry in oven, with door slightly propped to allow moisture to escape, for another 3 or so hours.  Check every hour and turn and press down.  Tomatoes will be a little sticky in the center when finished.  Smaller ones will finish sooner that large pieces.
