1 T. vegetable oil
3/4 lb. boneless beef top round steak, trimmed and cut into 1/2-inch pieces
3 cans (14 oz each) beef broth
2 cups cubed, peeled potatoes
1 can (14 oz.) diced tomatoes
1 cup chopped onion
1 cup sliced carrots
1/2 cup uncooked pearl barley
1 T. cider vinegar
2 tsp. caraway seeds
2 tsp. dried marjoram
2 tsp. dried thyme
1/2 tsp. salt
1/2 tsp. black pepper
1 1/2 cups sliced green beans (1/2-inch slices)
Description
Heat oil in large saucepan over medium-high heat. Add beef; cook and stir until browned on all sides.
Stir in all other ingredients, except green beans and bring to a boil. Reduce heat to low; cover and simmer 1 1/2 hours. Add green beans; cook, uncovered, 30 minutes or until beef is fork tender.
