2 lbs. cooked medium (31 to 35 count) deveined, peeled shrimp w/tails, thawed
1/2 cup tomato juice
1/4 cup vodka, if desired
1/2 tsp. red pepper sauce
1/2 tsp. sugar
1/2 tsp celery salt
2 T chopped fresh parsley
1 cup cocktail sauce
1/4 cup finely chopped green olives
Description
Arrange shrimp in single layer in 11X7-inch glass baking dish.
In saucepan, heat tomato juice, vodka and pepper sauce to boiling over medium-high heat. Stir in sugar; reduce heat. Simmer uncovered 5 minutes, stirring occasionally. Stir in celery salt and parsley; pour over shrimp. Cover; refrigerate 2 to 3 hours.
In small serving bowl, mix cocktail sauce and olives. With slotted spoon, remove shrimp from marinade; arrange on serving platter. Serve with sauce.

Don't marinate shrimp more than 3 hours; a longer time will toughen them.
