List of Ingredients 1 cup packed fresh Italian (flat leaf) parsley

1/4 cup extra virgin olive oil

1/4 cup red wine vinegar

1/4 cup packed fresh cilantro

2 cloves garlic, peeled

1/2 tsp. ground cumin

1/2 tsp. salt

1/4 tsp. crushed red pepper
Description In food processor or blender (for blender, combine olive oil and garlic cloves until smooth; add remaining ingredients), combine all ingredients.  Cover and process or blend until chopped, with a few leaves intact.  Cover and refrigerate 2 hours.  To store, cover and refrigerate up to 1 week.  For drizzling consistency, warm a few seconds in microwave oven.  Makes 3/4 cup (12 - 1 T. servings).

Other varieties:

Cilantro-Lime:  Substitute 1 3/4 cup cilantro for parsley and cilantro, 2 tsp grated fresh ginger (or 1/2 tsp ground ginger) for cumin, and an equal amount of lime juice (fresh preferred) for the vinegar.



Oregano-Orange:  Substitute 1/4 cup fresh oregano leaves for the cilantro and add 1 1/2 tsp. shredded orange peel.



Mint-Lemon:  Substitute 1 1/2 cups fresh mint for the parsley, and equal amount of fresh lemon juice for the vinegar, 1 tsp. Dijon-style mustard for the cumin, and add 1 1/2 tsp. finely shredded lemon peel.
