1 cup sugar
1 cup dark corn syrup
1 T. white vinegar
1 T. baking soda
Description
Combine sugar, corn syrup and vinegar in a large saucepan. Cook, stirring constantly until sugar dissolves. Cover pan for one minute to allow the steam to wash down the sugar crystals that cling to the side of the pan, or wipe down the crystals with a damp cloth.
Uncover pan and insert candy thermometer (should not touch bottom of pan). Cook without stirring until it reaches 300 degrees (hard crack stage).
Remove from heat; stir in baking soda. Pour into a buttered 9-inch square pan. It is not necessary to spread as the mixture will bubble and spread itself. Cool in pan on wire rack.
Break cooled candy into pieces. Dip in melted chocolate chips, if you prefer. Store 2 to 3 weeks in a tightly covered container with foil or plastic wrap between the layers.
