12 oz skinless, boneless chicken thighs, cut into bite-sized pieces
2 T flour
2 tsp paprika
3/4 tsp salt
1/4 tsp red pepper
1 T butter
1/2 c chopped onion
1 (8 oz) package presliced mushrooms
2 garlic cloves
1/2 c chicken broth
1/4 c sour cream
2 T fresh parsley
Description Bake Potatoes

Combine flour, paprika, salt and pepper in large zip-top plastic bag. Add chicken and shake to coat.

Melt butter in a large skillet over medium-high heat. Add chicken mixture, onion, mushrooms, and garlic, saute 5 minutes. Add broth, bring to a boil. Cook 6 minutes until chicken is done and sauce thickens, stirring frequently. Remove from heat; stir in sour cream.

Split potatoes with fork, fluff pulp. Divide chicken mixture evenly over potatoes; sprinkle with parsley.
