Name Oven Roasted Carrots

List of Ingredients 2 lbs. baby carrots

4 small onions, quartered

6 garlic cloves, peeled

2 T. olive oil

2 tsp. white wine vinegar or cider vinegar

1 to 2 tsp. dried thyme

1/2 tsp. salt

1/8 tsp. pepper
Description Place carrots, onions and garlic in two greased 15X10X 1-inch baking pans.  Drizzle with oil and vnegar.  Sprinkle with thyme, salt and pepper; gently toss to coat.



Cover and bake at 450 degrees for 20 minutes; stir.  Bake, uncovered, for 10 minutes; stir again.  Bake 10 minutes longer or until carrots are crisp-tender.
