1 cup uncooked brown rice
1/2 cup uncooked wild rice
1 medium onion, chopped
1 cup thinly sliced celery (include some leaves)
1 bay leaf
1 tsp. dried rosemary (or 1 T. fresh)
3 cups unsalted chicken broth
1 tsp. chicken bouillon granules
1/4 tsp. ground white pepper
1 cup whole berry cranberry sauce
Description
Combine all of the ingredients, except cranberry sauce, in a 2-1/2 quart pot. Bring the mixture to a boil over high heat. Reduce the heat to low, cover, and simmer without stirring for 40 to 50 minutes, or til the liquid has been absorbed. Remove the pot from heat, set aside, uncovered, for 5 minutes.
Coat a 2-quart casserole dish with nonstick cooking spray. Stir cranberry sauce into stuffing mixture, and loosely spoon the stuffing into the casserole dish. Cover the dish and bake at 350 degrees for 30 to 45 minutes, or til heated through. Serve hot.
