1 T butter
1 medium onion, chopped
4 cups chicken broth
1 medium potato, cubed
1 tsp. fresh thyme, chopped
4 oz. can fire-roasted diced green chiles
1 cup corn kernels, frozen or fresh
1/2 lb. Jack's Premium Catch refrigerated, canned crabmeat
1/2 cup 1/2 and 1/2
1/2 cup grated sharp cheddar cheese
Hot pepper sauce, optional
salt and pepper, to taste
Description
Heat butter in saucepan over medium-high heat and saute onion until it begins to soften, about 5 minutes. Add broth, potato and thyme and bring to boil. Reduce heat to low and simmer until potato is tender, about 15 minutes. Stir in chiles and corn. Add crabmeat and 1/2 and 1/2 and warm through. Remove from heat, stir in grated cheddar and allow heat of chowder to melt cheese. Season to taste with salt, pepper and hot sauce.
