2 T. canola oil
1 large yellow onion, chopped
2 garlic cloves, minced
1 lb. ground beef
15 oz. can white beans, rinsed and drained
15 oz. can kidney beans, rinsed and drained
15 oz. can pinto beans, rinsed and drained
15 oz. can black beans, rinsed and drained
28 oz. can diced tomatoes with juice
30 oz. cans tomato juice
2 T. chili powder
1 T. ground cumin
2 bay leaves
2 tsp. kosher salt
Toppings as desired (sour cream, cheese, green onions, etc.)
Description
In large saute pan over medium heat, heat 1 T. oil. Add onion and saute 3 minutes, or until softened. Add garlic and saute 1 minute. Place onion and garlic in slow cooker.
Add remaining 1 T. oil to pan and turn the heat to medium, add ground beef and saute about 5 minutes, breaking the beef apart with a wooden spoon until it is cooked through and most of the juices have evaporated.
Add the cooked beef and remaining ingredients to slow cooker and stir to combine.
Cover and cook on low for 8 hours.
