1 16 oz box rotini
2 T olive oil
2 lbs chicken breast, cut into bite size pieces
4 garlic cloves, minced
1 cup white wine
1 tsp salt
1/2 tsp peper
2 (15 oz) cans artichoke hearts quartered, drained, and finely chopped
1 cup parm-reggiano
1/2 cup fresh basil
Extra fresh basil (optional)
Description
1 Cook pasta, omit salt and fat
2 Heat oil in large skillet over medium-hi. Add chicken and saute 2 minutes or til browned. Add garlic; saute 1 more minute. Add wine, salt, pepper, and artichokes; simmer 5 minutes or until sauce thick and chicken done. Remove from heat; stir in cheese and 1/2 cup basil. Place sauce and pasta in large bowl, stir gently to combine. Garnish with extra basil if desired.
