1/2 cup chopped onion
1/3 cup chopped red pepper
1 tsp chili powder
1/2 tsp cumin
4 minced garlic cloves
1 T minced canned chipotle chili in adobo sauce
1 lb ground turkey
1 lb ground beef
3/4 cup bread crumbs
2/3 cup chunky salsa
1 tsp dried oregano
6 slices bacon, fried and crumbled
2 lg egg whites
1 cup Mexican style cheese (e.g., Kraft)
Description
1 Preheat oven to 350
2 Coat large nonstick skillet with cooking spray (sounds dumb, but you need to do it!). Add onion, red pepper, chili powder, cumin and garlic. Saute 1 1/2 minutes until onion tender. Add chile; saute 30 seconds. REmove from pan and cool.
3 Combine cooked onion mixture, turkey, beef, bread crumbs, 1/3 cup salsa, oregano, bacon and egg whites in large bowl.
4 Place half of turkey mixture in 8x4 loaf pan coated with Pam. Arrange 3/4 cup of cheese over top, leaving 1/2 inch border around cheese. Arrange remaining turkey mixture over cheese, pressing edges to pack. Spread remaining 1/3 cup salsa over the top.
5 Bake for 1 hour 25 minutes or until thermometer registers 165. Sprinkle remaining cheese over top. Let stand 10 minutes (important).
6 REMOVE FROM PAN; cut into 12 slices.
