Name Peanut Noodles and Turkey Skewers

List of Ingredients Peanut Sauce:
1/2 cup smooth peanut butter
1/2 cup warm water
2 T lemon juice
2 T soy sauce
2 tsp fresh ginger (chopped)
2 cloves garlic, chopped
1 tsp sesame oil
1/2 tsp sugar
1/4 tsp red pepper flakes

Noodles and Turkey:
8 oz wide lo mein noodles (or linguine)
2 carrots, shredded (or matchstick)
3 scallions, sliced
1 lb sliced turkey breast
Lemon slices to garnish, optional
Description 1. Heat broiler and spray broiler pan with nonstick cooking spray. Bring large pot of water to boil.
2. Peanut Sauce: In small bowl, whisk together peanut butter, 1/2 cup warm water, lemon juice, soy, ginger, garlic, sesame oil, sugar and red pepper. Set aside.
3. Noodles and Turkey: cook noodles according to package. Rinse under cold water. Toss with 1 cup of sauce, shredded carrot and scallion.
4. Cut each turkey cutlet crossways into 6 pieces. Thread onto 8 metal skewers (can use wooden throwaway skewers -- soak for 1 hour prior to broiling). Brush liberally with remaining sauce. Broil for 2 minutes. Turn and broil for an additional 2 minutes. Remove.
5. Serve immediately with noodles. Garnish with lemon, if desired.

Notes I didn\\'t garnish with lemon. Still tasted AWESOME!!

I used turkey tenderloins, sliced into thinner slices. Worked fine, but had to broil for about 10 minutes total (5 each side).

Next time I will try buying those chicken tenders that aren\\'t breaded.

I would also consider doubling the sauce and noodles because we loved that part and wanted more of it... noodles would be good lunch even without turkey/chicken.
