List of Ingredients 1 1/2 lbs boneless chuck steak, trimmed
1/2 tsp pepper
1/4 tsp salt
2 tsp olive oil
1 1/2 cups finely chopped onion
1/2 cup chopped carrot
1/2 cup chicken broth
1 tsp dark brown sugar
1 tsp fresh rosemary, chopped
8 oz sliced mushrooms
1 garlic clove minced
2 bay leaves
1 12 oz bottle Guinness Stout
Description Sprinkle steak with pepper and salt. Heat oil in Dutch oven over medium high heat. Add steak; cook 5 minutes each side until browned. Remove steak. Add onion, carrots, 2 T broth, and sugar. Cover, reduce heat to medium and cook 10 minutes. Stir in rosemary, mushrooms, and garlic. Cover and cook 2 minutes. Add bay leaves, Guinness, remaining broth, and steak; bring to a boil. Cover, reduce heat, and simmer 1 1/2 hours or until steak is tender.

Remove steak from pan; keep warm. Discard bay leaves and increase heat to medium high. Cook 5 minutes or until slightly thickened (I actually ended up thickening with 1/4 cup water and 1 T cornstarch).

Next time, I might try 1 T of brown sugar and beef broth, although this way was EXCELLENT.

I needed to thicken the sauce with cornstarch and water; simmering didn\\'t make it very thick at all. But I had a very fatty piece of meat too.
