12 oz. linguini
2 6 1/2oz. can chopped clams
pinch red pepper flakes
2 T. extra virgin olive oil
2 medium cloves garlic, minced
2 to 3 medium, ripe tomatoes, chopped
1/4 cup fresh basil, finely chopped
1 T. flour
1/2 cup white wine
freshly ground black pepper
1/4 cups grated Parmesan cheese
Description
Cook pasta according to package directions.
Meanwhile, drain clams, reserving broth, and set aside.
Heat and simmer broth with red pepper flakes for 5 minutes; set aside.
In a large skillet, heat oil and saute garlic for 1 minute. Add flour and stir to brown slightly. Add broth, wine, clams and tomatoes; simmer 5 minutes and add basil.
Drain pasta and toss with clam sauce. Serve immediately, topped with pepper and cheese.
