1/4 cup chopped shallots
2 bags (10 to 12 oz. each) fresh spinach, rinsed
1 1/2 tsp. balsamic vinegar
1/4 tsp salt
1/8 tsp. pepper
Description
Heat oil in a large Dutch oven over medium-high heat. Add shallots and cook 2 minutes. Add spinach and stir until it wilts. Stir in vinegar, salt and pepper. Serve immediately.
