Name Sesame Chicken Salad

List of Ingredients 2 boneless chicken breast halves, cooked and chopped
1 cup mayonnaise
1 T. sesame oil
1 T. white sugar
1/8 tsp. ground ginger
1/2 small head napa cabbage
2 green onions, chopped
1 T. sesame seeds, toasted
1 carrot, shredded
1/2 c. crispy fried rice noodles, for garnish
Description Several hours before serving, make dressing. Combine mayonnaise, sesame oil, sugar and ginger. Cover and refrigerate.

Thinly slice the cabbage and place in large bowl along with cubed chicken. Add the green onions, toasted sesame seeds and shredded carrot. Toss, then mix in the dressing. Divide salad onto serving plates and top with additional green onion and crispy rice noodles.

Notes I used lowfat mayonnaise and it was just fine. I might add more ginger next time.

I also used a mixture of napa cabbage and bok choy which was very good. Someone suggested adding grapes or chopped apples, which might be very good.

I used the already cooked, frozen and chopped chicken from Market Day (also Tyson makes some).
