1 c uncooked long-grain rice
1/2 c chopped dried pineapple
2 tsp butter
1/2 tsp grated lime rind
1/4 tsp salt
1/4 c chopped fresh cilantro
1 T chopped green onions
2 1/2 T fresh lime juice
Description
Bring water to a boil in a medium saucepan; add rice and next 4 ingredients (thru salt). Cover, reduce heat and simmer 20 minutes or til liquid is absorbed. Remove from heat and stir in cilantro, onions, and juice.
