3 slices bacon, cut up
4 c. peeled, sliced potatoes
1/2 c. chopped green, sweet pepper
1/3 c. chopped onion
1 1/2 c. shredded cheddar cheese (6 oz.)
1/8 tsp seasoned salt
1/8 tsp. pepper
1 T. margarine or butter (optional)
Description Coat one side of an 18-inch piece of heavy foil with non-stick cooking spray. On sprayed surface, arrange half of the bacon to within 2 inches of edge. Top with half the potatoes, half the green pepper, and half the onion. Sprinkle with half the seasoned salt and pepper. Repeat layers and dot with margarine, if desired.

Coat another 18-inch piece of foil on one side with nonstick cooking spray; place it, sprayed side down on top of potato stack. Seal all edges with a double fold. Bake on baking sheet for 1 hour at 400 degrees.

Remove from oven and test for doneness. If done, sprinkle with cheese and serve.

Notes The original recipe used the grill instead of the oven and put the cheese in the packet. I had trouble with it burning on the grill, but might have been due to the cheese. Worked great in the oven with adding cheese on top.
