1 lb. boneless, skinless chicken breasts, cut into bite-size pieces
1 c. chopped onion
1 c. diced red bell pepper
2 garlic cloves, minced
4 1/2 c. fat-free, less-sodium chicken broth
2 c. diced red potato
2 1/4 c. frozen whole-kernel corn
1/2 c. flour
2 c. lowfat milk (2%)
3/4 c. (3 oz.) shredded cheddar cheese
1/2 tsp. salt
1/4 tsp. black pepper
Description Cook bacon over medium-high heat until crisp. Remove bacon from pan; crumble. Set aside. Add chicken, onion, bell pepper, and garlic to drippings in pan; saute 5 minutes. Add broth and potato, and bring to boil. Cover, reduce heat, and simmer 20 minutes or until potato is tender. Add corn; stir well.

Place flour in bowl. Gradually add milk, stirring with a whisk until blended; add to the soup. Bring to a boil over medium-high heat. Reduce heat to medium, and simmer 15 minutes or until thick, stirring frequently. Stir in the cheddar cheese, salt, and black pepper. Top with crumbled bacon.
