1 c. chopped onion
1/2 c. chopped celery
1/2 c. chopped green bell pepper
1/2 c. chopped carrot
4 c. chopped roasted skinless, boneless chicken breasts (about 4)
3 1/2 c. frozen hash browns
3/4 c. water
1/2 c. barbecue sauce
1/4 tsp. ground cumin (may use up to 1 tsp. if your prefer spicy)
1 tsp. chili powder
1/2 tsp. minced garlic
1/4 tsp. salt
1 c. (4 oz.) shredded reduced-fat sharp cheddar cheese
1 jalapeno pepper, seeded and minced
Description Preheat oven to 375 degrees.

Heat oil in large cast-iron or heavy skillet over high heat. Add onion, celery, bell pepper, and carrot; saute 1 1/2 minutes. Add chicken and next 7 ingredients (chicken though salt); bring to a boil. Reduce heat, and simmer for 2 minutes.

Bake at 375 degrees for 10 minutes. Sprinkle with cheese and jalapeno; bake an additional 5 minutes or until cheese melts.
