List of Ingredients 2 c. skinned, uncooked chicken breasts, cut in thin strips (about 2 whole breasts)
1/4 c. salad oil
10 oz. canned bamboo shoots, drained and diced
2 c. celery
1 c. diced bok choy (Chinese chard) or romaine
10 oz. canned water chestnuts, drained and sliced
3 c. chicken broth
2 T. soy sauce
2 tsp. monosodium glutamate
1/3 c. corn starch
1/2 c. toasted almonds, optional
Hot cooked rice
Description In large heavy skillet, quickly cook chicken in hot shortening. Add bamboo shoots, celery, bok choy, water chestnuts, chicken broth, soy sauce, and monosodium glutamate; mix thoroughly. Bring to boiling; cover and cook 5 minutes over low heat or until crisp-tender.

Blend cornstarch and 1/2 c. cold water; add to chicken mixture. Cook, stirring constantly, until mixture thickens and bubbles. Garnish with almonds, if desired.

Serve immediately over hot, cooked rice.
