ham bone and fat
1 large onion, chopped
2 stalks celery, with tops
5 medium potatoes, peeled
Description Soak split peas in water for several hours. Drain and rinse before using.

Place ham bone and peas in large pan and cover with water. Add ham fat and simmer for 1 hour. Add onion and celery and simmer another 20 minutes.

Meanwhile, cook potatoes separately and when tender, mash right in the cooking water. Add to pea mixture and continue to cook until peas are very soft.
