List of Ingredients 3 lbs red potatoes
2 c. water
3/4 tsp salt
3 sprigs thyme
3 garlic cloves
3 T butter
1 tsp lemon juice
1/4 tsp black pepper
2 T chives
Description Cut potatoes in half. Place in a skillet with a flat bottom and sides cut side down.

Add water, salt, thyme, garlic, and butter. Bring to a boil over medium-high heat. Cover and cook for 15 minutes.

Uncover, remove thyme and garlic. Return to a boil, cook for 15 more minutes.

Meanwhile, use the garlic, lemon juice, and pepper to make a paste.

Remove potatoes from heat once soft, add the garlic mixture and chives.

Notes Instead of adding the garlic at the beginning and crushing it, I used minced garlic at the end. The garlic doesn't add any flavor to the potatoes as they cook.
