Mold:
2 small packages strawberry jello
1 envelope Knox gelatine
1 large can crushed pineapple, drained, reserve juice
1 can whole cranberry sauce
Topping:
8 oz. lowfat cream cheese, softened
1 bag miniature marshmallows
1 pt. whipping cream
Description
Add enough hot water to pineapple juice to make 3 3/4 cups liquid. Dissolve all gelatine in this liquid and add pineapple and cranberry sauce. Pour into large ring mold which has been sprayed with cooking spray. Refrigerate overnight.
For topping, beat cream cheese til fluffy. Fold in marshmallows and pour cream over all. Refrigerate overnight. Next day, beat til stiff.
Unmold jello and fill ring with topping; garnish with fresh strawberries.
