1 1/2 lb. fresh tuna steaks, cut 1-inch thick or canned tuna of choice
1 1/2 lbs. small red-skinned potatoes, quartered or sliced thickly
1 lb. green beans, cut into 1-inch pieces
3 T. olive oil
8 c. Romaine lettuce, sliced or mixed greens (Tuscany Blend)
1 1/2 c. cherry or grape tomatoes, cut into wedges
3/4 c. pitted black,kalamata or nicoise olives
2/3 c. chopped red onion
3 hard-cooked eggs, cut into wedges
capers and anchovies, optional
Vinagrette dressing of choice
Description
If using fresh tuna steaks, place fish in a shallow dish; pour 1/4 cup of vinaigrette over fish, turning to coat. Cover and marinate at room temperature for 20 minutes, turning fish once. Drain fish, discarding marinade.
Meanwhile, in a saucepan cook potatoes in a small amount of boiling salted water for 10 minutes, adding green beans for the last 3 minutes of cooking. Drain and cool slightly. Place potatoes and beans in a bowl and toss with olive oil. Spread vegetables in a single layer in a grill basket.
Lightly grease the rack of a gas grill. Preheat grill. Reduce heat to medium. Place fish and basket of vegetables on the grill rack directly over heat. Cover and grill until fish just flakes easily when tested with a fork and vegetables are tender, turning oce halfway through grilling. (Allow 8 to 12 minutes for fish and about 10 minutes for vegetables.) Remove from grill. Cut fish diagonally into 1/4-inch slices.
In a large bowl, toss together romaine, tomatoes, olives, and red onion. Divide among four dinner plates. Arrange the fish, potatoes, beans, eggs, anchovies and capers on top of greens. Serve with vinaigrette.

Notes
An orange or lemon vinaigrette is delicious, especially if using canned tuna. With the marinated tuna steaks you might prefer a more Italian or Greek flavor vinaigrette.
If pressed for time, it is not necessary to grill vegetables; simply cook on stove top.
