List of Ingredients 8 oz. boneless, skinless chicken thighs, cut in 1-inch pieces
2 medium carrots, cut into 1/2-inch pieces
1 medium red or green sweet pepper, cut into 1/2-inch pieces
1 c. chopped onion
3 cloves garlic, minced
2 15-oz. cans cannellini beans or great northern beans, rinsed and drained
14 1/2 oz. can Italian-style stewed tomatoes
8 oz. fully cooked smoked turkey sausage, halved lengthwise and cut into 1/2-inch slices
1 1/2 c. chicken broth
1/2 c. dry white wine or chicken broth
1 T. snipped fresh parsley
1 tsp. dried thyme, crushed
1/4 tsp. ground red pepper
1 bay leaf
Description In a 3 to 5 qt. crockpot place carrots, sweet pepper, onion, garlic, beans, undrained tomatoes, chicken and sausage.

In a bowl, combine chicken broth, wine, parsley, thyme, red pepper and bay leaf. Add to crockpot. Cover and cook on low for 7 to 8 hours or on high 3 to 4 hours.

Discard bay leaf before serving.
