Cake:
3/4 c. flour
1 tsp. baking powder
2 tsp. cinnamon
1 tsp. ginger
1 1/2 tsp. salt
1/2 tsp. nutmeg
3 eggs
1 c. sugar
2/3 c. canned pumpkin
1 tsp. lemon juice
chopped pecans
Filling:
1 c. powdered sugar
8 oz. cream cheese, softened
4 tsp. margarine
1/2 tsp. vanilla
Description
Sift together flour, baking powder, cinnamon, ginger, salt and nutmeg.
Beat eggs for 5 minutes; gradually add sugar, pumpkin and lemon juice. Stir into dry ingredients.
Spread onto jelly roll pan lined with waxed paper. Cover mixture with chopped pecans and bake at 375 degreees for 15 minutes. (Watch carefully as edges burn easily.) Turn out onto a towel that has been sprinkled with powdered sugar. Remove paper and roll up jelly roll style in towel. Allow to cool.
Meanwhile, mix all filling ingredients and beat til creamy.
When cool, unroll cake and spread with filling. Roll again, without towel, and refrigerate for a few hours. Slice and eat.
