Name Peas & Pancetta

List of Ingredients 1 T olive oil
2 1/2 oz. pancetta, 1/4-inch diced
1 large shallot, halved and sliced
10 oz. frozen peas
1 tsp. kosher salt
1/4 tsp. freshly ground black pepper
1 T julienned fresh mint leaves
Description Heat olive oil in a medium saute pan, add pancetta and shallot, and cook over medium heat for 5 to 7 minutes, stirring occasionally, until pancetta is browned and shallot is tender. Add frozen peas, salt and pepper and cook over medium-low heat for 4 to 5 minutes, until peas are hot. Stir in mint, taste for seasonings, and serve hot.

Notes To make ahead, saute pancetta and shallots and set aside. Before serving, reheat, add peas and finish recipe.
