Name Southern Style Chicken and Dumplings

List of Ingredients 2 tsp. olive oil
3 celery stalks, chopped
2 carrots, chopped
1 onion, chopped
1 garlic clove, minced
1/4 tsp. dried thyme
4 cups chicken broth
1 1/2 cups chopped, cooked boneless chicken breast
1/4 lb. green beans, trimmed and cut into 1/2-inch lengths
1/4 cup fresh parsley, chopped
Serve over dumplings, spatzle or cooked noodles in stew.
Description Heat a large saucepan over medium heat until hot. Swirl in the oil, then add the celery, carrots, onion, garlic and thyme. Cook, stirring occasionally, until the vegetables are softened, 5 to 6 minutes. Add the broth and chicken. Bring to a boil; reduce heat, cover and simmer 10 minutes. Add green beans and simmer until the vegetables are tender; 10 to 15 minutes. Stir in parsley.

Notes I prefer to make it Chicken and Noodles and cook frozen noodles in the stew.

I also just quickly saute cut up chicken breasts and then add to stew instead of using precooked chicken or rotisserie chicken.
