Name Rice Salad
Number of People 6
List of Ingredients 1 cup uncooked rice (any variety)
1 1/2 tsp. dry Italian Salad Dressing mix (like Good Seasons)
1 1/2 tsp. water
5 T olive oil
3 T vinegar (your favorite)
1 T low-sodium soy sauce
1/2 tsp sugar
8 oz. bag fresh spinach leaves
1 cup chopped celery
1/2 cups sliced green onions (1 bunch)
1 1/2 cups chopped green olives
12 slices bacon, cooked and crumbled
Description Cook rice according to the package; let cool 10 minutes.

Combine dressing mix with water and let stand 5 minutes. Add oil, vinegar, soy sauce and sugar and mix well.

When rice is cool, add to dressing mixture and mix well. Cover and refrigerate until ready to serve.

Just before serving, stir in spinach, celery, green onions, olives and bacon.
