Name Hearty Mushroom Barley Soup

List of Ingredients 1 T oil
1 medium onion, slivered
1/2 cup carrots, sliced
1 cup dry barley, rinsed
4 tsp. minced garlic
2 tsp. dried thyme
16 oz. sliced button or cremini mushrooms
8 cups (2 qts.) beef or mushroom broth
2 T tomato paste
2 tsp. balsamic vinegar
2 bay leaves
1 tsp. salt
2 tsp. miso paste (or more salt)
freshly ground black pepper, to taste
Description Heat the oil in a stock pot over medium heat. Add onions and carrots and saute for about 5 minutes or until translucent. Reduce heat and add barley, garlic and thyme and saute 3 to 5 minutes. Stir in mushrooms, followed by broth, tomato paste, vinegar, bay leaf and 1/4 tsp. salt or miso. Bring to a boil, reduce heat and simmer, covered, for at least an hour, or til barley is tender. Season with more salt or miso and black pepper.
