Name Olive Martini Chicken

List of Ingredients 2 T olive oil

4 boneless, skinless chicken breast halves

1/2 tsp. salt

1/2 tsp. pepper

6 T butter

9 cloves garlic, chopped

3/4 cup gin

3 T dry vermouth

3 tsp. lemon juice

3/4 cup sliced pimento-stuffed green olives
Description Heat the olive oil in a large skillet over medium-high heat.  Season the chicken breasts with salt and pepper.  Place chicken in skillet and cook until browned on each side, about 5 minutes per side.



Reduce heat to medium, add the butter and garlic.  Saute for about 3 minutes.  Pour in the gin, vermouth, lemon juice and olives; simmer for 5 to 10 minutes, until the sauce thickens and the chicken juices run clear.
