List of Ingredients 2 T olive oil

3 medium orange and/or red bell pepper, thinly sliced

2 large sweet onion, thinly sliced

4 cloves garlic, finely chopped

1/4 cup Knorr tomato bouillon w/chicken flavor

2 cups water

2 bay leaves

1 cup pimento-stuffed olives, halved

1/4 cup drained capers, coarsely chopped

2 T chopped fresh parsley

6 halibut, cod or sea bass fillets (about 2 lbs.)
Description Heat olive oil in a large, deep non-stick skillet over medium-high heat and cook next 3 ingredients about 4 minutes or until tender, stirring occasionally.  Stir in tomato bouillon and next 5 ingredients.  Bring to a boil.  reduce heat and arrange halibut in skillet.  Simmer covered about 10 minutes or until fish flakes with a fork.  Remove bay leaf before serving.
