Name Beef Marsala
Number of People 4
List of Ingredients 4 cups (4 oz) wide egg noodles

3/4 lb. top round steak, about 1/4-inch thick, cut into 4 pieces

1/2 tsp. salt

1/4 tsp. freshly ground black pepper

2 tsp. olive oil

1 onion, sliced

1 T all-purpose flour

8 oz. sliced fresh mushrooms

1/3 cups Marsala wine

1/2 cup chicken broth

2 T chopped, fresh parsley
Description Cook noodles according to package directions; drain and keep warm. 



Sprinkle steak with 1/4 tsp. salt and 1/8 tsp. pepper.  Heat a large nonstick skillet over medium-high heat.  Swirl in 1 tsp. oil, then add beef.  Cook until lightly browned, about 2 minutes per side.  Transfer to a plate; keep warm.



Return the skillet to the heat.  Add remaining 1 tsp. oil, onion and flour.  Cook, stirring occasionally, about 2 minutes.  Add mushrooms and cook until softened, about 4 minutes.  Pour in the Marsala wine, broth and remaining 1/4 tsp. salt and 1/8 tsp. pepper; bring to a boil.  Cook until the sauce thickens slightly, 2 minutes.  Add the beef and cook, turning once, until heated through, about 2 minutes.  Remeove from heat and stir in prasley.  



Serve over noodles.
