Name Savory Bean Spinach Soup

List of Ingredients 42 oz. vegetable or chicken broth

15 oz. diced tomatoes, undrained

15 oz. Great Northern beans, rinsed and drained

1/2 cup rice

1/2 cup finely chopped onion

2 cloves garlic, minced

1 tsp. dried basil, crushed

1/4 tsp. salt

1/4 tsp. pepper

8 cups coarsely chopped fresh spinach or kale

finely shredded Parmesan cheese
Description In a 3 to 4 quart slow cooked, combine broth, tomatoes, beans, rice, onion, garlic, basil salt and pepper.



Cover and cook on LOW for 5 to 7 hours or HIGH for 2 1/2 to 3 1/2 hours.



Stir in spinach or kale and serve with Parmesan.
