Name Brie and Cherry Pastry Cups

List of Ingredients 1 sheet frozen puff pastry, thawed in refrigerator

1/3 to 1/2 cup red cherry preserves

4 oz. Brie cheese, cut into (about 1/2" pieces)

1/4 cup chopped pecans

2 T chopped fresh chives
Description Heat oven to 375 degrees.  Spray 24 mini muffin cups with cooking spray.  Cut pastry into 22 to 24 pieces (1 3/4" to 2" squares).  You can piece them if necessary.  Slightly press each square into muffin cup; press center with finger.



Bake 10 minutes.  Press center with handle of wooden spoon.  Bake 6 to 8 minutes longer or until golden brown.  Immediately press again in center.  Fill each with about 1/2 tsp. preserves.  Top with cheese piece and pecans.  Bake 3 to 5 minutes or until cheese is melted.  Top with chives.  May be served warm or room temperature.
