Name Savory Summer Chili

List of Ingredients 1 T. canola oil

1 lb. ground turkey breast

3/4 cup chopped onions

2 garlic cloves, minced

2 tsp. ground cumin

2 tsp. dried oregano

pinch of ground cloves

1 cup chopped tomatillos

4.5 oz. can chopped green chiles, undrained

15 oz. can cannellini or other white beans, rinsed and drained

1/2 cup cilantro leaves, chopped

1 cup lowfat, reduced-sodium chicken broth

2 T lime juice

salt and ground black pepper, to taste

1/4 cups chopped scallions
Description In a large, heavy pan, heat oil over medium-high heat.  Add turkey and cook until it loses its pink color, about 5 minutes.  Transfer to a bowl and set aside.



In same pot, saute onion until soft, about 5 minutes.  Mix in garlic and saute 1 more minute.  Mix in cumin, oregano, cloves and tomatillos and cook until the tomatillos are soft, about 4 minutes, stirring occasionally.



Add chiles, beans, cilantro and broth.  Return turkey to pot.  Simmer, uncovered, until the chili is thick enough to plop from a spoon, about 10 minutes.  Mix in lime juice and season to taste with salt and pepper.  Serve topped with scallions.
